Sourced from Mongolia's grasslands, this French-cut lamb rack comes as two racks of around 12 trimmed ribs each. These racks are from older lambs, so the meat has a deeper, stronger lamb flavour and a firmer texture than young lamb. That makes them ideal for marinating and for curries: marinate overnight before roasting or grilling, or cut into chops and slow-cook in a curry until tender.
